More Christmas Cookies

Today was another cookie day. Lea-Frances and I made Chocolate Snow Caps (Norman decided he'd rather watch TV). She wasn't interested in helping me mix up the dough, but she helped me make the cookies once it was chilled. I formed the dough balls and she rolled them in confectioners' sugar.

Chocolate Snow Caps

2 cups flour
2 tsp baking powder
1/2 tsp salt
1 2/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 tsp peppermint extract
2 squares (2 oz) unsweetened chocolate, melted
1/3 cup milk
confectioners sugar

Mix flour, baking powder, and salt, and set aside. Cream sugar, butter, eggs and extract thoroughly. Add melted chocolate, mixing well. Add dry ingredients alternately with milk. Divide dough in half. Wrap in wax paper. Refrigerate about 2 hours until firm. Shape into 1-inch balls and roll in confectioners sugar. Place on greased baking sheet leaving space between as cookies will spread. Bake @ 350 for 12-15 minutes. Yield 4-5 dozen cookies.
